Last night I made us salads with the leftover vegetables from last weekend when my parents visited. What an unexpected treat. Normally I don't get jazzed up about a salad, but I was pleasantly surprised by my creation. Check it out:
* One bag of Dole Boston (or baby) lettuce mix. This is key because the baby lettuce is not overly crunchy/hard like iceberg lettuce.
* One chicken breast. I used a pre-cooked breast that we keep in the freezer for nights like this. Warm up the chicken in the microwave.
* Several small tomatoes. Not regular-sized tomatoes and not cherry tomatoes. These are in between. And quite delicious. I found them at Whole Foods. They are my fav.
* Shredded cheddar cheese sprinkled into the salad.
* Salted cashews. Who knew?
* Croutons. I mixed Cesar salad croutons and garlicky ones because we had a few of both.
* Cesar salad dressing.
Who knew that this seemingly uninteresting combination of ingredients would make a good salad. Boy did it make a good salad. I could eat another now and its only 9AM. The great thing about this salad is that it takes about 5 minutes to prepare, which is pretty much my attention span when it comes to cooking.
